Dinner Tonight – A Week of Menus – Pineapple Maple Salmon

This is the last week, the last week of counting the Omer, the last week before Shavuot and the last week before Memorial Day.  Seems like Summer is on its way and we are excited over here at JoyofKosher for Summer BBQ’s, lighter recipes and spending time with our kids.  In the mean time we got to get dinner on the table while we plan for a three day yuntiff.

Monday is a great night for quiche, make one for dinner and one for the freezer to have ready to go for one of the many yuntiff meals.  There are so many to choose from so make something with what you got on hand.  This Tomato Basil Goat Cheese Quiche might just do the trick.

Tuesday we can go Chinese with a Beef and Green Bean Stir Fry over Rice that is so quick and easy you will have plenty of time to make something else for your freezer.

Wednesday try these Baked Crunchy Corn Chicken Fingers for a fun treat that also makes great leftovers.  Serve with a baked sweet potato and a salad.

Thursday we can enjoy some fresh salmon to make Pineapple Maple Glazed Salmon, make sure to buy extra and use the rest to make some Salmon Cakes for Shavuot.
