If you are wondering what you should make today (with your spare time) then get ready to celebrate National Cherry Cheesecake Day.  There is no debating here, no wondering if you should go for raspberries or oreos, today we celebrate Cherry Cheesecake alone with all its glory.  What is it about cherries and cheesecake that is so enticing?  Is it the bright red contrasted with the stark white of the cake?  Is it the subtle tartness with the almost savory cheesy dessert? Whatever it is people love it so much that it has it’s own day and there is no better way to celebrate than having a slice.

We usually reserve our cheesecake talk for Shavuot (which is only 33 more days), but the only cherry cheesecake on the site is this fun Deconstructed Cherry Cheesecake.   This recipe plays with that tradition by re-imagining cheesecake as an ice cream sundae. With a rich cheesecake ice cream topped with a cherry sauce and graham cracker streusel, it has all the classic flavors of a New York Cheesecake in a fun and different form.
