Dinner Tonight – A Week of Menus with Oven Roasted Falafel

Happy Earth Day make sure to check out our Earth Day Menu.  On to the rest of the week where hopefully Spring will be in the air and we can continue a focus on green (peas, asparagus…) except for Thursday when we turn our attention to blue and white for Yom Ha’Atzmaut (Israel Independence Day), we got to get a little creative with these menus right.

Monday is our meatless day and this Savory Orange Roasted Tofu & Asparagus is sure to please.  Serve atop some brown rice for a quick, easy, healthy and delicious meal.

Tuesday this Salmon and Pea Rotini looks good with those sugar snap peas, a real one pot meal, maybe serve some juicy cantaloupe for dessert.

Wednesday can be livened up with this Grapefruit and Jerk Grilled Chicken with Arugula served with a baked potato if desired.

Thursday we celebrate Israel with Oven Roasted Falafel and these Mini Blueberry Lemon Tarts.
