This week many of us will be kashered for Pesach already, but we can't eat matzo, so here you go a chametz free, matzo free week of meals.
On Tuesday when my kids are calmoring for pizza I offer a up a Portobello Mushroom pizza either with this Sun-dried Tomato and Brie Stuffed Mushrooms replacing the bread crumbs with ground walnuts or this Spinach and Fontina Stuffed Portabella. If you need more to fill you up serve with a baked potato that can cook alongside the mushrooms wrapped in tinfoil.
On Wednesday try this Quinoa with Zucchini and Spiced Chicken Skillet for and quick and easy dinner, just leave out the chickpeas unless you are Sephardi. .
On Thursday try this fantastic recipe from Jamie, Turkey Meatballs served in lettuce cups they are perfect on or before Pesach. I would serve with sweet potato fries for a fun meal before the festivities begin tomorrow.
