Dinner Tonight – A Week of Menus – Potato and Cheddar Frittata

Phew!!! We made it.  We cleaned, we cooked, we ate and now we can relax.  Except the kids are home and we got to eat and start thinking about food for the last days.  Let’s keep it simple and try some recipes are kids can get into.

Monday is our first day of Chol Hamoed and our usual day for meatless meals.  Let’s try Jamie’s Potato and Cheddar Frittata.  Let the kids wash the potatoes and crack and beat the eggs – they love using a whisk.  Serve with this Cream of Watercress Soup or this Grapefruit Salad with Candied Pecans.

Tuesday you might feel like getting back in there, you might have guest in from out of town or need a nice easy meal that looks amazing.  Consider this Roast Chicken with Chestnuts and Orange Yam Mash.

Wednesday we are starting to prepare for Yom Tov again and that last 3 days of Pesach.  You have likely filled your breakfasts and lunches with Matzo Brie, Matzo Pizza, and Matzo Bagels and lots and lots of potatoes (baked, stuffed, roasted, mashed).  Tonight let’s try this Carrot Ginger Soup that can be eaten hot or cold based on the weather and serve it with Eggplant Parmesan Stacks.
