Dinner Tonight – A Week of Menus – On a Budget

The 15th of April – Tax Day – not this year, we get two extra days to do our taxes and with Pesach just a day over, we need it.  Some of you might get lucky with a refund and others will have a big bill.  Either way tax season always reminds me to focus on my budget.  So let’s have a budget week of meals that keeps us away from eggs and potatoes.

Monday it makes sense to get our pasta fix.  Let’s try Jamie’s Three Cheese Mac n Cheese with Roasted Garlic Tomatoes.

Tuesday we can turn to tofu to guide our budget meal.  Make sure to shop at Asian Market for the best prices.  Try this Tofu Pad Thai.

On Wednesday we can have some chicken in this easy budget friendly Pozole I learned from Claire Robinson just before Pesach at the Manischewitz Cook-Off.  It was very tasty and I had never used hominy before.

On Thursday I have been wanting to make this Salmon Lentil Stew and I would serve with some plain rice and maybe green beans.
