Dinner Tonight – A Week of Menus – Spaghetti “Bolognese”

With Purim behind us and an extra hour of daylight on our side, we now look towards Passover.  Oy, less than 4 weeks to go, have you started cleaning?  I know I haven’t, but we can start cleaning out our pantry with easy chametz filled dinners.

On Monday let’s enjoy this meatless monday with Jamie’s Spaghetti “Bolognese”, if you don’t have spaghetti, use whatever pasta you want to get rid of.  If you don’t have the fake meat, just leave it out.  My goal is to only buy produce from now until Pesach.  Serve with a simple salad.

On Tuesday we can use up some rice with this Ginger Beef Stir Fry Over Rice.  And again if you don’t have beef use chicken or sub tofu, use what you have.

On Wednesday let’s use up some beans with this White Chili, I happen to have a lot of white beans to get rid of, if you have black beans make a Black Bean Chili.   If you have dried beans, soak and cook them and use in any recipe calling for canned.  Serve with Skillet Cornbread or Tortilla Chips and Guacamole.

On Thursday use up some canned or frozen corn (unless you happen to have fresh) in these Broccoli and Cheese Calzones.  If you have extra flour to get rid of make your own pizza dough for the recipe.
