Dinner Tonight – A Week of Menus – Leek and Mushroom Chicken

Less than 2 weeks until Pesach, I am sure some of you are already kashering the house.  So for the next two weeks I will share dinner menu ideas that are not only quick and easy but that don’t have any chametz in them.  If you are still enjoying your bread and pasta then feel free to add it to any meal.

On Meatless Monday let’s go with this Potato Leek Quiche, the potato crust is inspired, make an extra and freeze it for next week. A salad always pairs well with quiche, maybe some arugula and tomatoes with olive oil and vinegar.

For Tuesday we can go meat with Jamie’s Steak with Red Wine Glazed Carrots in this one skillet meal that can be made in about 45 minutes.

For Wednesday we can enjoy a Leek and Mushroom Chicken with Herbed Spaghetti Squash, the perfect pre or during passover meal that is really great any time.

On Thursday a light and easy fish is the best idea.  How about some Herb Baked Salmon with this Portobello Mushroom, Spinach and Onion Quinoa.

If you are still cleaning and planning, hang in there, you can do it.  If you are already on to the cooking, good for you!  For the ultra procrastinators like myself, just breathe and know that somehow it always gets done.
