The Best 8 Latke Recipes for Chanukah

It all started about ten years ago.  I was a newlywed and still learning my way around the kitchen.  Our friend Seth invited us to his annual Chanukah party and added that this year there would be a latke making contest. I couldn’t wait to enter!  Up against some fierce competition including my husband (who hasn’t made a latke since) my thin, crispy potato latkes won over the judges and I was crowned champion.  Some people went sweet, while others went savory. Most tried for a classic potato, but a few added vegetables, cheeses and other fillings. Sometimes you can’t beat tradition.  But I still like getting creative. When I first met Jamie a little  over a year ago, I found she had at least as many latke recipes as I did.  I knew we would get along well.  So here are 8 amazing latke recipes to choose from, but don’t stop there, we have 54 to choose from and are hoping you will add yours, too.
