I love milchigs, but confess I don’t eat them as much as I once did due to the high calorie count. I’m hopeful more and more low-calorie kosher choices will appear in the marketplace. That being said, I really like a tortilla popped into the microwave with a little cheese and salsa. (And I’m making pizza for supper tonight!)

my lasagna — in addition to the noodles, marinara sauce and ricotta cheese, i also include tons of vegetables and morningstar grillers (the fake hamburger meat) — a complete meal.

We like to keep it simple on hot days–Homemade bagels baked early in the morning, with cream cheese, tomato, and red onion.
There’s nothing better than my parents’ homemade blintzes- My dad makes the creplach, my mom makes the fillings (cheese and potato/onion), and they stay up late at night folding them together.

We love large portebella mushrooms stuffed with sauteed onions, red peppers and imitation crab topped off with a nice slice (or two) of cheese- muenster for its mellowness, swiss for its sharper taste…your choice. Yum!

Lukshen kugel made with butter, sour cream, cottage cheese and loaded with diced apples, dried cherries and cinnamon sugar.
I love anything that has melted cheese and also tomato sauce, perhaps even an extra thick macaroni and cheese. HOWEVER, when i am totally lazy and need a quick snack/lunch, i take some low sodium ritz crackers, lots of extra sharp cheddar on a dish in the microwave until the cheese is melted. I add a few dashes of ketchup and that is my rendition of totally satisfying snack.
I love Pasta Caprese and Ravioli
Wow, choosing just one is tough. I mean I LOVE cheesecake, obviously, and have never encountered a cheesecake that didn’t have something to recommend it, but there are so many other great dishes… I mean, great cheese is awesome even just on its own. When push comes to shove, however, I think a nice, simple cheese omelet can be just heavenly… When I really want to throw my diet out the window for cheesy, creamy goodness, however, I go for something a little decadent like my “Emmental, Gruyère and Crème Potato Gratin” — the tanginess of the Gruyere and Emmental cheese provides a lovely counterpoint to the creaminess of the crème, making for an all around sublime, even heavenly dish – especially when washed down with a medium chilled kosher Willm Gewurztraminer from Alsace. This is also lovely accompanied by a crunchy, delicately bitter frisée salad with a few whole or half walnuts sprinkled on and dressed with a vinaigrette dressing made of sunflower oil (or any not very flavorful oil) plus 1 tablespoon of walnut oil.
My recipe for “Emmental, Gruyère and Crème Potato Gratin” [this is really just my take on a “gratin Savoyard” (from Savoie region, just north of Dauphiné), think of it as a much cheesier version of the better known “Gratin Dauphinois”]:
2 ½ cups crème fraîche or heavy cream;
¾ cup grated Emmental (also known as Emmentaler) cheese (packed);
¾ cup grated Gruyère cheese (packed);
3 pounds russet potatoes, peeled, cut into 1/8 inch rounds using a mandolin;
2 tablespoons fresh Italian parsley, chopped;
butter to grease the pan;
salt and pepper to taste.
Preheat your oven to 400 degrees F. Combine the grated cheeses together in a bowl. Butter your baking dish (I use a 13x9x2 glass dish), and lay half the potato slices in the bottom, overlapping slightly. Generously season with salt and pepper. Spread half the crème fraîche or heavy cream over the layered potatoes. Spread half of the combined grated cheeses over this layer of seasoned potatoes and cream. Add the remaining potatoes evenly over this. Generously season this layer, as before, with the salt and pepper, and spread the rest of the crème fraîche or heavy cream over this, and then do the same with the rest of the grated cheese. Bake uncovered for thirty minutes, then lower the oven to 350 degrees F and bake for an additional forty-five minutes or until top is a lovely golden brown and the potatoes are nicely tender. Remove from oven and let stand for ten minutes or so. When ready to eat, sprinkle with the chopped parsley and serve.
A proper Gratin Savoyard or Dauphinois would include garlic (2-3 cloves or so), and it is lovely in this version too, but I usually leave it out. Another step I usually skip, but can make for nice results is to mix 1 tablespoon or so of the crème fraîche or heavy cream with 1 beaten egg and then to pour this mix on the gratin for the final 15 minutes of baking (though turn the heat up to 380-390 or so for this last step).

My favorite cheesy recipe would have to be crustless quiche. Lots of vegetables and lots and lots of cheese! As a matter of fact that is what I am making for our Shul for Shavuot luncheon.

My favorite favorite is the Mexican fiesta meal with the salsa tasting bar, enchiladas, spicy tilapia, jalapeno poppers, corn & bean salad, etc. We also skip the cheesecake and go for oober buttery cinnamon buns!

You can do this in advance- refrigerate potato shells and stuffing separately- fill and heat in oven when necessary.

My favorite Shavuos treat…Aunt Sarah’s 3 cheese noodle kugel! It’s so decadent and delish that I dont’ use any low fat/non fat cheeses! I go for the gusto once a year! I deserve it don’t I?!!!! cream cheese, cottage cheese and sour cream, mixed in with golden raisins, cinnamon and a good dose of slivered almonds….does anything taste better then that? I think not! Can’t wait…..
